Judy Peacock Goodwin When I went here: http://www.joel-robuchon.net/, I had the most phantasmic pommes puree of my entire life. The secret: A 1 to 1 ratio of butter to potatoes. I kid you not. That, and a really good ricer or food mill. Here's the recipe.
